Who we are
Head Chef and owner of Thistle Baking Company, Maddy Redden, has been on a pastry journey since 2019, graduating from the French Pastry School of Chicago.
Mystic, Connecticut was next on that journey, working with local farms and ingredients to bring some of the freshest baked goods available.
Now, with a recent relocation to Grand Rapids, Madeline wishes to bring her best recipes and experiences to life.
